A Caprese Salad

Start with a fresh bowl of mixed greens... Here's my cruset of balsamic vinegar and EVOO (unshaken)

Shaken... then added to salad and tossed
Vine-ripened tomatoes (Costco- not nearly as good as mine in my garden, but we occassionally get them so I sometimes use them)

Sprinkle generously with sea salt...

Goat's cheese- delectable! (I purchase a package, cut it into rounds, then freeze individually until ready to use). LOVE it!
Sorry, I need to digress for a moment... when I went out to my patio garden to snip some fresh basil for my salad I found a visitor- a dragon fly on the basil plant. See him on the far right?
Then he flittered off and landed on the deck. Ahh, nature... now, where was I? Oh yes, snipping my beautiful basil and building my salad.

Finished product- doesn't it look awesome?!! A bit of artichoke or a few calamata olives and yum! So, so good!!! Did I mention I could eat this every day?
